Commis 2

Eathai serves traditional Thai food in Bahrain. Our kitchens are run by Thai chefs, our recipes are not adapted, and every venue is fully halal. We are looking for a Commis 2 to work a station in our Seef kitchen.

The job

You run a station under direction. You cook to the recipe card, you hold most of your station alone through a normal service, and there is a senior cook beside you for the rest. This is the grade where a cook stops being helped and starts being relied on.

What you will do

• Cook your station to the recipe card — the weight, the method and the plate

• Finish your mise en place in full before service opens

• Call to the senior cook when you are falling behind, rather than letting the pass find out

• Store everything covered, labelled and dated, and keep FIFO rotation

• Take and record fridge and freezer temperatures when asked

• Keep your station clean while you work, not only at the end of the shift

• Learn a second station, and then a third

What we are looking for

• One year or more in a professional kitchen

• Able to work a station under direction and cover most of it alone

• Able to follow a recipe card accurately, rather than cooking by eye

• Basic food safety — temperatures, dates, rotation and cross-contamination

• Enough English to read a recipe card and a date label and to take an instruction

• Fit for a ten-hour day on your feet, holding a Bahrain food handler card or able to get one

• Thai or wider South-East Asian cuisine is an advantage

• Already in Bahrain on a transferable visa is a plus, but not required
